An immersive journey uncovering the art of traditional method sparkling. Hosted by one of Printhie’s Sparkling Specialists (either the winemaker or a member of the Swift family), it includes a private tasting of the Swift Sparkling range where you’ll be able to taste sparklings that are over a decade old. During the tasting, your guide will show you the vineyards used to create the range located just outside the Cellar Door. You'll gain a rare insight into the process of creating one of Australia’s finest sparkling brands, from base wine to the disgorging and aging process. After your private tasting, you'll be escorted into Printhie Dining to enjoy a four-course set degustation with matching wines whilst taking in the commanding views over the valley below. Awarded Best Sparkling at the NSW Wine awards in 2018, 2019, 2020, 2021, 2022 and 2023 as well as Best Australian Sparkling at the 2022 Champagne and Sparkling Wine World Championships in London. The Swift Sparkling range reflects exceptional cool climate craftsmanship that continues to raise the bar for Australian sparkling.

Learn why oysters and traditional method sparkling are the perfect match with oysters shucked to order from Printhie's innovative oyster tank. Start your experience with a private behind the scenes tour of the oyster tank, where you'll hand pick four oysters that will be shucked and served with vinaigrettes that are matched to four award winning Swift Sparklings including the cuvée, rosé, vintage and blanc de noirs. A Sparkling Specialist will guide you through the sparkling and oyster matching before leaving you to settle in and enjoy the self paced matching. Seated in the pavilion you'll be able to admire the tuscanesque views across the valley below. Please note food substitutes are not available for this experience.

Spend the morning enjoying the peaceful sounds of Printhie's lake and learn the art of fly fishing. The private instructor can cater for all skill levels. Whether you are a beginner looking to try something new or an expert wanting to refine your technique, the two hours of private instructions are tailored to your preferences. If you are a beginner you will be shown how to rig the rod, how to cast and how to reel in your fish. Your fly-fishing experience will be followed by a degustation lunch including matching wines at Printhie Dining, where the chef team consciously crafts menus that showcase premium local produce. Please wear sturdy, enclosed shoes and bring a jacket. Printhie follows the 'catch and release' practice.

Sharon has shared her knowledge on the international stage and was recently recognised with the 2026 Good Food Guide 'Bill Grainger Trailblazer Award', a testament to her leadership in shaping modern Australian native cuisine. Together with our team, Sharon will present a curated three-course dinner plus canapés showcasing native botanicals and ingredients from aromatic leaves and seeds to vibrant native fruits and spices. Each course will hero these unique flavours. Start the evening with canapés and a native flavoured cocktail or mocktail, followed by three courses matched with Printhie wines.
