Angelica

The inspiration for the Baja Cantina team's new Hills restaurant, Angelica, is Guadalajara, so it's not a surprise to see birria on the menu. You'll find pulled beef birria on tacos and served with consommé, as well as chicken birria topping the nachos. The dishes have a Baja Cantina-style Sydney twist – burrata with chipotle, lychee-citrus ceviche, cauliflower tacos with pico de gallo – all served with fights of tequila and smoky mezcal or cold Coronas.
