5-Senses Black-Tie Dewgustation Dinner — an 8-course fine-dining spectacle with a live ensemble, tableside flambée and smoked dishes; an elegant, immersive evening.
EARTH, WINE & FIRE Progressive Dinner — board a jeep and journey out through the vineyard and around the winery, finishing in the barrel room for intimate tastings and stories.
Vine + Dine Journey — a relaxed vineyard walk and talk, followed by a winery sommelier discussion and a seasonal lunch that highlights provenance and pairings.
Fireside Friday, Tapas & Museum Wines — cosy shared plates by the fire paired with rare museum bottles and cellar treasures.

Vine+Dine Journey
Heritage Estate’s gourmet Vine+Dine Journey is a unique attraction in Queensland. It starts with a Vineyard Walk & Talk, then in the winery, a Sommelier Wine Discussion, and finally, the chef explains the providence of the produce. Allow 1.5 hours to experience and delight your senses with our 5-dish/wine experience presented Friday, Saturday, and Sunday; on the hour. In the vineyard, our viticulturist shows the vines in action. Smell the beautiful roses at the end of the rows. Learn about prunings, the importance of terroir (soil), and climate issues. Inside, the soaring ceilings, huge fires, and a brilliant cellar door is the setting. Learn about the winery antiques. The sommelier will explain the way the wines were made. The international chef prepares fresh seafood, game meats and local produce. The aromas and flavours will create a memorable experience and enhance your understanding of the nuances of pairing food and wine. POETs Progressive Dinner - Every Friday
Discover what makes excellent wines by dining in the vineyard with our viticulturist, learning about wine descriptions from our sommelier, and working out the best food/wine pairing with chef-led discussions. Starting at 5 pm, this is a journey of discovery in a country manor, famous parliamentary table, and roaring fires. Included is a 3-course dinner.
5-Senses Degustation Discovery
The gourmet “5-Senses Discovery" is unique in Queensland. Starting with a Vineyard Walk and Talk, then in the winery, a Sommelier Wine Discussion, and finally, the chef explains the providence of the produce. Allow four hours to delight your senses with their 7-dish/wine experience presented on the second Saturday monthly; 6pm. In the vineyard, with a glass of champagne, their viticulturist shows the vines in action. Then the tastes of 5-star Wines and chef-hatted dining, the smells of exclusive 54 scent "Nez du Vin", sights of silent movies, sounds of a live String Quartet Ensemble, and a touch of class. Celebrate in cooler weather, seated on Queensland’s first Parliamentary Table (c1859), by roaring fires. Lift the beautiful crystal lid to see Hickory smoke waft from the gravlax salmon, see burning sauce, with sparkles spraying delicately over the large black plate. Savour wild caught venison and other delicacies. No wonder this experience is called 5-Senses. 7 dishes with names like ‘Diamonds in the Rough’, ‘Smoked Earth After Rain’, ‘Salted Jump in the Mouth’, ‘Bitter Sweet Geo-space’, ‘Fathom, Falter & Flinch’, 'Rooted Guerdon', ‘Gilded Granite’.
