Find it, then learn how to cook it. Every second Saturday (11 July, 25 July, 8 August), Beltana Farm runs an intimate truffle masterclass limited to just 20 guests. The morning starts with a guided hunt at 9am, you'll be out on the trufflière with their dogs, pulling fresh truffle from the ground. Then you'll head into the kitchen for a hands-on cooking session with one of their chefs, learning home-friendly recipes that let you make the most of truffle season long after you leave. This is for the people who don't just want to eat truffles, they want to understand it. How to shave it, how to store it, how to pair it, and how to cook with it at home without overthinking it. You'll leave with recipes, know-how, and perhaps muddy boots.

The sun goes down. The hunt begins. Every second Saturday evening (4 July, 18 July, 1 August), Beltana Farm hosts a twilight truffle hunt for an intimate group. As the light drops over 800 oak and hazelnut trees, you'll follow their dogs through the trufflière for a golden hour hunt that feels more like a film than a farm tour. Afterwards, gather around the firepit for truffled snacks from the outdoor barbecue and a glass of bubbles as night settles in. It's quiet, it's beautiful, and it's the closest thing Canberra has to magic hour on a truffle farm, because it literally is.
